Soft-Ripened Spruce


Harbison, as it's publicly known — is a soft-ripened cheese with a rustic, bloomy rind, made by Jasper Hill Farm.

Young cheeses are wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the farm's woodlands. The finished product is woodsy and sweet, balanced with lemon, mustard, and vegetal flavors. There is a natural blue green flora present on the spruce cambium.

Recipe — Fondue for one

1. Unwrap the naturally runny cow's milk cheese.

2. Place the cheese in the oven (with the broiler setting) for about 30 seconds.

3. Carefully cut off the top of the cheese with a serrated knife.

4. Dress the top however you'd like — figs, nuts, honey all work.

Because the cheese is wrapped in a strip of spruce wood, it maintains its shape while it heats. It essentially becomes its own bowl—a self-contained fondue pot.
