Our butchers started as producers and purveyors of fine meats in Parma in 1978.  Almost instantly, they had a reputation. Their attention to detail immediately separated them in a town where producers were all too happy to let their zipcode do their bidding.

Four decades later, their notoriety has only deepened as they've continued to push the practices and products that define Parma. After trying meats from 10 butchers around the World, we found that none came close in complexity of flavor, richness of story or intensity of craft.
